Have you heard of breakfast cookies? There are no shortage of breakfast cookie recipes on the internet and they’re often made with wholesome ingredients like oats, Greek yogurt and a variety of nut butters. I am a big fan of healthy breakfast cookies but in this postpartum phase of life, I must admit that the cookies I’ve been consuming for breakfast look a lot more like soft, buttery cookies with crispy edges, speckled with chocolate chips and crunchy Corn Flakes cereal. Let’s just pretend the Corn Flakes in these cookies make them breakfast appropriate, mmmkay?

No judgment, please. The newborn baby phase of life = Anything goes.

There’s something about postpartum life that has me craving chocolate chips around the clock. We always have a bag or two of them in our pantry and they call to me when my sweet tooth starts raging. I love them by the handful, sprinkled on top of a spoonful of peanut butter (#alldayeveryday) or paired with salty cashews and my favorite Paleo coconut crisps but there’s no denying that chocolate chips were basically made for chocolate chip cookies.

And chocolate chip cookies were made for me… especially the current version of myself who is surviving on minimal sleep and who gets great joy out of biting into a Chocolate Chip Corn Flake cookie, no matter what time of day.

9 a.m.? Why not?

10 a.m.? A little lunch appetizer.

3 p.m.? The perfect afternoon pick-me-up.

10 p.m.? Pre-bedtime nursing fuel.

Any time of day is a good time of day for these bad boys!

Chocolate Chip Corn Flake Cookies

I’ve loved Chocolate Chip Corn Flake cookies for years and thought they were relatively popular but it wasn’t until I began recipe testing my own version of the cookies that I realized maybe they aren’t as beloved as I thought. Ryan said he had never heard of them nor tried Chocolate Chip Corn Flake Cookies in the past so you better believe I took it upon myself to immediately rectify this atrocity. I’d like to think we made up for lost time because I’ve now made five batches of these cookies in four weeks. Can’t stop, won’t stop.

As we bit into our billionth Chocolate Chip Corn Flake Cookie, we started chatting about other cereals we might be able to successfully incorporate into cookies. I have visions of Cinnamon Toast Crunch snickerdoodles, Honey Bunches of Oats oatmeal cookies… so many possibilities!

But, before I get too ahead of myself, let’s stick with this classic cookie that may or may not actually be a classic cookie depending on whether or not these cookies are actually as popular as I previously believed them to be. Popular or not, they’re worth a try, especially if you’re a fan of texture in your cookies. The crispy, not-too-sweet Corn Flakes contrast perfectly with the rich chocolate chips and the sprinkle of sea salt on top of the cookies at the end just takes them to the next level.

Chocolate Chip Corn Flake Cookies

Corn Flake Chocolate Chip Cookies


Description

Packed with rich chocolate chips and crisp Corn Flakes cereal, these Chocolate Chip Corn Flake Cookies are soft and buttery and the perfect cookie to have on hand when your sweet tooth is begging for something deliciously different.


Ingredients

  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon sea salt (+ additional sea salt for sprinkling)
  • 3/4 cup unsalted butter, softened 
  • 1 cup packed brown sugar
  • 1/2 cup white sugar
  • 1 teaspoon vanilla extract
  • 1 egg
  • 1 egg yolk
  • 1-1/2 cup crushed Corn Flakes cereal
  • 1 cup semisweet chocolate chips

    Instructions

    1. Preheat the oven to 325°F. Grease cookie sheets or line with a silicone baking mat or parchment paper.
    2. In a medium-size bowl, stir together the flour, baking soda and salt. Set aside. 
    3. Using a stand mixer or electric beaters, beat together the butter and the sugars in a large bowl until creamy. Add in the vanilla, egg, and egg yolk and continue to beat on low speed until combined.  
    4. Mix in the combined flour, baking soda and salt until just blended. 
    5. Fold in the chocolate chips and crushed Corn Flakes by hand until incorporated into the dough. Using a cookie scoop, drop onto prepared cookie sheets and sprinkle with a tiny bit of sea salt (optional). Bake for approximately 13-15 minutes, or until cookie edges are lightly browned.
    6. Cool on baking sheets for 10 minutes or so before transferring to wire racks to cool completely. Store in an air-tight container.  

    Notes

    These cookies also taste amazing with butterscotch chips!
