Pumpkin Spice Latte Overnight Oats


A recipe for pumpkin spice latte overnight oats – an easy, one-step breakfast version of your favorite Fall drink made with pumpkin, oats + coffee or espresso requiring just 2 minutes of prep!

I LOVE hearing that you guys tried and enjoyed a recipe (honestly, it makes my day more than you know). As with any recipe developer, and especially one who likes to use healthy ingredients, there will be some people who don’t like what you post. 

Thankfully I’ve been doing this for enough years that the constructive criticism doesn’t get to me! I know not every recipe is going to be everyone’s cup of tea but I do know that every recipe I put on the blog is one that I (and C!) genuinely love. 

So do these pumpkin spice latte overnight oats taste exactly like a Starbucks version of oatmeal?! No, but I’d argue they’re better because a) they actually have pumpkin in them and b) this breakfast isn’t made up of 70% sugar. 

Here’s What You Need:

  • Rolled oats – make sure they aren’t the quick-cooking version or steel-cut
  • Brewed coffee or espresso
  • Unsweetened almond milk
  • Pumpkin puree – make sure the ingredient list is just “pureed pumpkin” and you didn’t accidentally grab a can of pumpkin pie filling. 
  • Pumpkin spice – I used my DIY pumpkin spice recipe but you can buy a pre-made mix too!
  • Chia seeds – you can also use ground flax seeds if you don’t have chia seeds
  • Maple syrup – or other liquid sweetener

What is Pumpkin Spice?

Other than being the trending item on Instagram for the past few years, pumpkin spice is actually a mixture of spices that pair really well with fall flavors and produce. Since it’s gotten so popular over the years, you can actually buy pre-made pumpkin spice but it’s also super easy to make at home! Here’s a simple recipe that makes 1 tsp of pumpkin spice:

  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground ginger
  • 1/4 tsp ground nutmeg
  • pinch of allspice
  • pinch of cloves

How to Make Overnight Oats

The best thing about overnight oats is how little effort it takes to make a delicious pumpkin-flavored breakfast or snack. Simply combine all of the ingredients into a jar or container that seals up tightly and stir or shake to combine. Place the container in the refrigerator overnight or for at least 6 hours.

When you’re ready to enjoy this pumpkin spice latte overnight oats simply remove from the fridge, stir, top with any ingredients of your choice and eat away!

Ingredients

  • 1 cup rolled oats (not quick-cooking and gluten-free if necessary)
  • 1/2 cup brewed coffee (or 2 espresso shots)
  • 1/2 cup unsweetened almond milk or coconut milk
  • 1/2 cup pumpkin puree
  • 2 tbsp maple syrup
  • 1 tsp pumpkin spice (I used my DIY recipe)
  • 2 tsp chia seeds
  1. Combine all ingredients in a jar or sealed container and give it a good shake.
  2. Place in refrigerator overnight or for at least 6 hours.
  3. Heat up in microwave if desired, or eat cold.
